The answer probably lies somewhere around the Leidenfrost effect. It allows the liquid -- beer, in this case -- to look like it's hovering on the pan, while the liquid is actually floating on a layer of water vapor.

If you've ever splashed water droplets into a hot frying pan, you've likely witnessed the fascinating effect. It happens when the pan hits just the right temperature -- hot enough so the liquid doesn't just immediately boil away.
