Prepare gelatin according to the instructions on the label, with equal parts hot water and cold sparkling wine. Chill according to directions in a large pan, individual ramekins or shot glasses.
When the Jell-O is solid, stamp out shapes with cookie cutters, scoop into bowls or let people attack it with spoons. Don't forget to sprinkle decorating sugar on top for a final sparkling touch.
