If you think you hate cold soup, you have probably been force-fed watery gazpacho or icy borscht.

But that's not your fault. You had a bad introduction to cold soup. Trust us, you like cold soup.

Here are the cold soups you have always loved and just not known it.

Chilled cantaloupe gazpacho with crisped pancetta

A beautiful bridge between summer and fall, this bowl plays on the classic melon and prosciutto while feeling both light and indulgent. If you don't eat pork, lamb bacon is a delicious substitute.

Habanero gazpacho

Not the thin, drippy, insipid stuff that reminds you of what came out of your high school lab partner's nose. Real gazpacho is lush, thick with olive oil and bursting with brightness from a finishing touch of sherry vinegar. Add a habanero (seeds included) to your favorite recipe and let the soup sit overnight for the flavors to blossom and the fire to heat up.

We see you, sour cream addict. Embrace your love of all things cool and creamy with this chilled potato leek soup. It's refreshing, savory and benefits greatly from a generous spoonful of sour cream and a sprinkling of chives. But, then, what doesn't?

Avocado soup

The guacamole price is too damn high. Give the 'potle a rest and buy your own avocados this week. Puree them and add chicken stock, cilantro and jalapeños for a Mexican touch. Or add coconut milk, lime juice and fried shallots for a Southeast Asian flair. Best of all, seconds won't cost you extra.

Melted ice cream
