That one restaurant with ants: Noma relocates to Sydney for 10 weeks

If you're in the land down under in January or February 2016, you can pay hundreds of dollars for the pleasure of eating ants.

One of the world's top restaurants, Noma, will head to the Barangaroo section of Sydney, Australia for 10 weeks starting in January 2016.

However, reservations always sell out in record time, especially when the restaurant leaves Copenhagen for out of town gigs. This pop-up follows sold out London and Tokyo engagements in 2012 and 2015, respectively.

René Redzepi's two Michelin star restaurant put Scandinavian food on the map. Don't come expecting Swedish meatballs and and Danish sweets — the name is a mashup of the Danish words for "Nordic" and "mad," and the food is experimental to the max.

Those ants are ants (above). According to Bloomberg Businessweek, ants are used in this case for their acidic, citrusy taste. In the past, Noma has paired them with roasted cucumber, beef tartar or a still twitching, almost live prawn.

Redzepi is almost universally praised for his experimental takes on traditional Nordic food. And now Aussies don't have to brave a 23-hour flight to try dishes like berries and greens soaked in vinegar for one year.

Noma's focus in Sydney will be on traditional and seasonal Australian ingredients, so there may be no remnants of any previous iterations of the restaurant.

Chef Redzepi says, "We’re leaving behind our ingredients in Copenhagen. All we’ll take from our kitchen is an open frame of mind and a passion for learning."

All you need to bring is your reservation (if you can get one), your credit card (no word yet on the cost of the meal) and your A-game (we bet bugs will appear somewhere on that menu).
