The oyster's rugged journey from the Canadian coast

As farming and aquaculture grow more mechanized, growing oysters still remains a tiring, manual process.

For the Hardys, a sixth generation family of oyster farmers on Canada’s Prince Edward Island, it's second nature: “[I] never did anything else ... This is where I want to be, with my family,” explained Gordon Hardy, the youngest of Hardy patriarch Leslie. Several of Leslie’s sons, daughters and grandchildren farm oysters off the island, situated off the coast of Nova Scotia, which all together grows 2 million pounds of oysters annually.

Photographer CJ Gunther spent time with the Hardys, watching how they're pulling shellfish from Canada’s frigid waters and more than live up to their name.
