Gilmore Girls fans -- we know what you're thinking. How does one write a cookbook inspired by two women who essentially lived off of Pop-Tarts, diner food and coffee?

Well one person is willing to try. Baker and caterer Kristi Carlson is writing the Eat Like A Gilmore cookbook that honors all of the Friday-night dinners, Chef Sookie St. James concoctions and Luke Danes diner fare that kept the residents of Stars Hallow nourished over the years.

With the Gilmore Girls Netflix revival on its way, this cookbook couldn't have come at a better time.

Carlson created a Kickstarter campaign for the book, and hopes to raise $20,000 in the next 25 days to achieve her goal. As of Tuesday afternoon, she had close to $16,000.

"This idea came to me last summer – a fun, creative project and a means to combine two of my favorite things: cooking, and life in an imaginary world called 'Stars Hollow,'” Carlson writes on her Kickstarter page.

She mentions some mouthwatering Gilmore recipes such as a "s’mores wedding cake... pumpkin pancakes served with apple butter, peach sauce made with maple syrup... and a sausage wrapped in a pancake, tied with a piece of bacon."

"I’ve already spent a few months experimenting with these foods – to test the feasibility of this endeavor," Carlson writes. "And, let me tell you, the results have all been utterly delicious."

In the words of the wise Lorelai Gilmore: "This is what we've been training for our whole lives."
