The jelly pool party cake is a Down Under cult classic, made famous by the ever-legendary Australian Women's Weekly Children's Birthday Cake Book. Surrounded by chocolate fingers, with jelly babies lazing around in a green jelly pool, it was an elaborate, albeit dated, desert that was a real treat at birthday parties.

If you want to hold onto that nostalgia, the jelly cake is now undergoing a renaissance, SBS News reported, thanks to an Australian duo blending some unusual flavours.
Adele Cummings and Renee Heron are behind the website, The Jelly Revolution, with many of their novel creations using unexpected ingredients such as elderflower, zucchini and even sparkling wine.
For those of us with a real sweet tooth, they've also stuck to the classics, with raspberry, peach and tropical fruits taking us back to those long summer days spent in the backyard with Madonna playing in the background.
