This looks so delicious it's easy to forget it's actually low-carb.
Popsugar's bread-free zucchini grilled cheese is gluten-free, chock filled with vitamin-dense zucchini (high in vitamins A, C and K) and has two types of cheese in its crust.
The zucchini is grated then made into patties before being baked then used to sandwich two gooey slices of melted cheese.

The trick is to carefully wring out the grated zucchini mixture before baking it so the patties become crisp instead of steaming and staying soft.
The other trick is to eat these in moderation, because it seems way too easy to eat 14 of these sandwiches all in the name of, "low carb."
