"It's like food science meets arts and crafts," someone quips in the most accurate summary of Bon Appétit's viral gourmet junk food show.

This time, pasty chef Claire Saffitz attempted to make a gourmet version of Twix, a feat that involved tempered chocolate, delicate shortbread dough, and lots of caramel.

"Is Mercury in retrograde?" Claire asks, when she realizes she forgot to add enough butter to her shortbread. (The answer is no, Mercury is not in retrograde.)

The 40-minute video also includes a heated discussion of how to properly pronounce "caramel" and chocolate bag massages.

At the end of the journey, the recreation Twix used thin shortbread cookies under a delicate layer of caramel, and then drizzled tempered chocolate over the creation.

The end product: a beautiful gooey, crunchy, chocolatey, and fancy Twix bar. So maybe all the breakdowns were worth it!
