Claire Saffitz, pastry chef and literal angel, tackled a beloved trash snack: Bagel Bites.

All things considered, this project was simpler than other Gourmet Makes attempts. The pizza bagel's signature red sauce, cheese, and pepperoni would be a breeze to recreate, but the mini bagel's iconic gumminess would be the real challenge.

Saffitz's read-through of the ingredients revealed a few components we'd probably be better off not knowing about, like "mechanically separated chicken." It's still tasty though.

The recreated bagels Saffitz made ended up being twice the size of Bagel Bites, but as the pastry queen herself said, "I always think how I wish Bagel Bites were bigger."

While Saffitz thought her mini bagels turned out well, her coworkers disagreed. They noted that the bagels were too crusty to be Bagel Bites.

"I don't feel good about that criticism, and I don't appreciate it," a grumpy Saffitz told the camera.

The second round of bagels turned out more soft, and more like Bagel Bites' chewy, manufactured dough. Once she nailed the texture, she started on making a gourmet version of Bagel Bites' red sauce.

The result: A delicious Bagel Bite topped off with prosciutto and three kinds of cheese. I'd snack on it any day.
